There's just something so special about a homemade cookie that makes everything a little bit better - whether you're an adult or a child! We're always on the lookout for easy, healthy recipes we can make with our kids. This grain-free M&M cookie recipe* is one of our favorites! Naturally gluten-free, refined sugar-free and egg-free, it's the perfect easy-to-make cookie. Best of all? You can eat the cookie dough!
While the inclusion of M&M candies doesn't make this recipe truly refined sugar-free; we love that it's naturally sweetened with maple syrup and packed with protein from the almond flour. Trust us, no one will ever know these are 'healthy!'
2 cups almond flour
1/2 teaspoon sea salt
1/4 teaspoon baking soda
1/4 cup coconut oil, melted
1/4 cup maple syrup
1/2 cup mini chocolate chips
1/2 cup M&M candies
1. Preheat the oven to 350ºF. Line a baking sheet with parchment paper.
2. In a bowl, combine the almond flour, baking soda, salt, maple syrup and melted coconut oil. Stir together until a soft, crumbly dough forms. Gently mix in the chocolate chips and M&M candies.
3. Place golf-ball sized scoops of dough on the baking sheet and gently press down to flatten a bit. One batch usually makes about 18 cookies. Bake for 11-14 minutes, until barely golden brown on the edges.
4. Let cookies sit on the baking sheet for 2-3 minutes and then transfer to a wire rack to cool. Store in a sealed container for several days or in the freezer indefinitely.
We love to make these cookies year-round and just change out the M&M colors for the holidays and seasons. They're always a crowd favorite and no one ever suspects how 'healthy' they really are!
